This webinar examines the evidence regarding both nutritional adequacy and quality of vegetarian and vegan diets. It also covers each of the primary nutrients of interest to plant-based eaters, including protein, iron, zinc, vitamin B12, calcium, vitamin D, iodine, and omega-3 fatty acids. Considerations for infants, children, and seniors are addressed.
Upon successful completion of this course, the participant should be able to:
- List at least 4 nutrients of interest for vegetarians and vegans.
- State the percent of additional protein recommended for adults and children eating high fiber, whole food, and plant-based diets.
- Suggest 2 ways to boost calcium in a vegan diet.
- List 2 strategies to ensure sufficient iodine in a plant-based diet.
