Overview:
While plant based diets are associated with decreased risk of chronic disease and longevity, there are compounds labeled as "anti-nutrients" that may be of concern. What does the science say about anti-nutrients such as lectins, oxalates, goitrogens, and phytoestrogens? We will weigh in on animal and human randomized controlled trials, and epidemiological studies to assess risk vs. benefits of anti-nutrients.
Learning Objectives:
Upon successful completion of this one-hour course, the participant should be able to:
• Identify ideal dietary patterns to support longevity.
• Define anti-nutrients.
• Identify food sources of anti-nutrients, including lectins, oxalates, goitrogens, and phytoestrogens.
• Identify health benefits, and potential health problems with anti-nutrients.
• Teach clients practical ways to minimize anti-nutrients, if indicated.
